That sounds like a very interesting recipe. And a big deal to make. I'd make two suggestions. First, no cheddar. It is just not an Italian thing. If you feel you may need a second kind of cheese, Asiago might be a good choice. Or--since this is a southern Italian dish--perhaps sharp provolone.
